Simmered lotus root

Lotus root is a seasonal ingredient from now on.

Lotus root has many nutrients.

1. Mucin: Mucin has a function to help digestion.

It has a function of “mucosal barrier” to protect the gastric mucosa and is said to be good for gastritis.

2. Insoluble Dietary Fiber: It has the intestinal function .

3. Others: Vitamin C, potassium etc.

So lotus root helps to provide a skin care. How nice! !

And from the view point of oriental medicinal ingredients

① Physical fitness

② Fatigue recovery

This time We will introduce simmered lotus root.

<Ingredoents>

· Lotus root 150 g, carrots 60 g, fried tofu 1/2 dumplings, boiled quail eggs 3 to 4 pcs

· 1 tablespoon soy sauce, 1 tablespoon mirin, dashi of katsuo 200ml,
  salad oil 1 tablespoon, water appropriate amount, sesame oil (favorite) 1 tablespoon

<How to cook>

① Lotus root is peeled and cut into pieces and put in water
  containing 1 teaspoon vinegar (outside quantity).

② Carrots scurry as it is without peeling off

③ Cut fried tofu into bite-sized pieces

④ Put ①(drained) and ② in the pan and stir fry them with salad oil and do again
    in the mirin and soy sauce as the lotus root becomes transparent

⑤ Add boiled quail eggs and fried tofu in ④, add water until covered them
    and simmer with medium heat until the lotus root becomes soft

⑥ Put sesame oil as you like and read

Lotus root brings us good luck which “can see in the future” because of the hole . Awesome !!

We also eat them as Osechi dishes.
